Club Med

  Med diet, that is.  
I had a fun talk with the mom of G's swim friend yesterday and this is what transpired.  
We left with recipes in hand
...or in phone...
and had a great dinner.  




Ingredients:
6 whole wheat pita breads 
6 oz tomato pesto 
2 roma tomatoes 
1 bunch spinach, chopped 
4 mushrooms, sliced 
1/2 cup crumbled feta 
2 tbsp Parmesan cheese 
3 tbsp olive oil 

Preheat oven to 350 degrees 

Spread pesto over one side of pita.  
Top with tomatoes, spinach, mushrooms, feta cheese, and parmesan. 
Drizzle with Olive oil. 

Bake for 12 minutes.
Quarter and serve.
